Thai Stir-Fry Spice Prawn & Pineapple Fried Rice
This Thai Stir-Fry Spice Prawn and Pineapple Fried Rice balances juicy prawns, golden pineapple and crisp vegetables with aromatic savoury seasoning. It is bright, cheerful and perfect for using leftover cooked rice.
Made with our Thai Stir-Fry Spice, it brings aromatic flavour to quick everyday meals without needing a cupboard full of separate seasonings.
🥣 Ingredients
- 400g cooked jasmine rice, chilled
- 350g raw king prawns
- 1½ tbsp Thai Stir-Fry Spice
- 200g fresh pineapple, diced
- 1 red pepper, diced
- 100g frozen peas
- 4 spring onions, sliced
- 2 eggs, beaten
- 2 tbsp light soy sauce
- Juice of 1 lime
- 1 tbsp vegetable oil
- Fresh coriander, to serve
🍳 Instructions
- Heat half the oil in a large wok. Add the prawns and cook for 3–4 minutes until pink, then remove.
- Add the remaining oil and cook the pepper, peas and pineapple for 3 minutes.
- Push the vegetables to one side, pour in the beaten eggs and scramble until just set.
- Add the cold rice and Thai Stir-Fry Spice. Stir-fry over a high heat for 3–4 minutes, breaking up any clumps.
- Return the prawns, then add the soy sauce, lime juice and spring onions. Toss until piping hot.
- Finish with coriander and extra lime wedges.

🍽️ Serving Suggestions
Serve in bowls with cucumber, chilli sauce or a fried egg. Always cool leftover cooked rice quickly and keep it refrigerated until needed.
