Thai Beef Lettuce Cups
Crisp lettuce leaves filled with savoury aromatic beef make a fresh, hands-on supper or crowd-pleasing sharing plate.

🧂 Ingredients
- 500g lean beef mince
- 1½ tbsp Thai Stir-Fry Spice
- 1 tbsp vegetable oil
- 1 red pepper, finely diced
- 4 spring onions, sliced
- 2 tbsp light soy sauce
- 1 tbsp sweet chilli sauce
- Juice of ½ lime
- 2 little gem lettuces, leaves separated
- Fresh coriander and lime wedges, to serve
🔪 Method
- Heat the oil in a large frying pan or wok.
- Add the beef and stir-fry for 6–7 minutes, breaking it up until browned.
- Add the pepper, spring onions and spice blend and cook for 3 minutes.
- Stir in the soy sauce, sweet chilli sauce and lime juice. Cook until glossy and any excess liquid has reduced.
- Spoon into lettuce leaves and finish with coriander.
🍽️ Serving Suggestions
- Offer jasmine rice alongside.
- Serve the filling and leaves separately for everyone to build their own.
