Thai Beef Lettuce Cups

Crisp lettuce leaves filled with savoury aromatic beef make a fresh, hands-on supper or crowd-pleasing sharing plate.

🧂 Ingredients

  • 500g lean beef mince
  • 1½ tbsp Thai Stir-Fry Spice
  • 1 tbsp vegetable oil
  • 1 red pepper, finely diced
  • 4 spring onions, sliced
  • 2 tbsp light soy sauce
  • 1 tbsp sweet chilli sauce
  • Juice of ½ lime
  • 2 little gem lettuces, leaves separated
  • Fresh coriander and lime wedges, to serve

🔪 Method

  1. Heat the oil in a large frying pan or wok.
  2. Add the beef and stir-fry for 6–7 minutes, breaking it up until browned.
  3. Add the pepper, spring onions and spice blend and cook for 3 minutes.
  4. Stir in the soy sauce, sweet chilli sauce and lime juice. Cook until glossy and any excess liquid has reduced.
  5. Spoon into lettuce leaves and finish with coriander.

🍽️ Serving Suggestions

  • Offer jasmine rice alongside.
  • Serve the filling and leaves separately for everyone to build their own.
