Crispy Tofu & Vegetable Stir-Fry
Golden tofu and crisp colourful vegetables make a satisfying plant-based stir-fry with bold aromatic flavour.

🧂 Ingredients
- 400g extra-firm tofu, drained
- 2 tbsp cornflour
- 1½ tbsp Thai Stir-Fry Spice
- 2 tbsp vegetable oil
- 1 small broccoli, cut into florets
- 1 red pepper, sliced
- 150g sugar snap peas
- 1 carrot, cut into thin strips
- 2 tbsp soy sauce
- 1 tbsp maple syrup
- Juice of ½ lime
- Rice, to serve
🔪 Method
- Pat the tofu dry, cube it and toss with the cornflour and ½ tbsp spice blend.
- Heat 1 tbsp oil in a wok and fry the tofu for 8 minutes until crisp. Remove to a plate.
- Add the remaining oil and stir-fry the vegetables for 5 minutes.
- Mix the soy sauce, maple syrup, lime and remaining spice blend. Add to the wok with the tofu.
- Toss for 2 minutes until hot and glossy, then serve with rice.
🍽️ Serving Suggestions
- Add sesame seeds for crunch.
- Swap rice for noodles if preferred.

Press the tofu for 15 minutes if it feels wet; drier tofu crisps more easily.
