Lemongrass Prawn Noodles

Plump prawns, tender noodles and crunchy vegetables meet in a bright, aromatic sauce with plenty of lime.

⏱️ Prep, Cook & Serve

Prep: 15 minutes | Cook: 12 minutes | Serves: 4

🧂 Ingredients

  • 250g rice noodles
  • 400g raw king prawns
  • 1½ tbsp Thai Stir-Fry Spice
  • 1 tbsp vegetable oil
  • 1 red pepper, sliced
  • 150g bean sprouts
  • 4 spring onions, sliced
  • 2 tbsp light soy sauce
  • 1 tbsp sweet chilli sauce
  • Juice of 1 lime
  • Fresh coriander, to serve

🔪 Method

  1. Soak or cook the noodles following the packet instructions, then drain.
  2. Mix the soy sauce, sweet chilli sauce, lime juice and spice blend.
  3. Heat the oil in a wok. Cook the prawns for 2 minutes on each side, then remove.
  4. Stir-fry the pepper and spring onions for 3 minutes. Add the noodles, bean sprouts, sauce and prawns.
  5. Toss over high heat for 2 minutes, then finish with coriander.

🍽️ Serving Suggestions

  • Serve with extra lime wedges.
  • Scatter with crushed peanuts if allergies allow.
