Lemongrass Prawn Noodles
Plump prawns, tender noodles and crunchy vegetables meet in a bright, aromatic sauce with plenty of lime.

🧂 Ingredients
- 250g rice noodles
- 400g raw king prawns
- 1½ tbsp Thai Stir-Fry Spice
- 1 tbsp vegetable oil
- 1 red pepper, sliced
- 150g bean sprouts
- 4 spring onions, sliced
- 2 tbsp light soy sauce
- 1 tbsp sweet chilli sauce
- Juice of 1 lime
- Fresh coriander, to serve
🔪 Method
- Soak or cook the noodles following the packet instructions, then drain.
- Mix the soy sauce, sweet chilli sauce, lime juice and spice blend.
- Heat the oil in a wok. Cook the prawns for 2 minutes on each side, then remove.
- Stir-fry the pepper and spring onions for 3 minutes. Add the noodles, bean sprouts, sauce and prawns.
- Toss over high heat for 2 minutes, then finish with coriander.
🍽️ Serving Suggestions
- Serve with extra lime wedges.
- Scatter with crushed peanuts if allergies allow.
