Thai-Spiced Salmon Coconut Traybake

Flaky salmon and golden potatoes roast in a lightly creamy coconut-spice sauce for an easy one-tray supper.

⏱️ Prep, Cook & Serve

Prep: 15 minutes | Cook: 35–40 minutes | Serves: 4

🧂 Ingredients

  • 4 salmon fillets
  • 500g baby potatoes, halved
  • 250g cherry tomatoes
  • 1 red onion, cut into wedges
  • 1½ tbsp Thai Stir-Fry Spice
  • 150ml coconut milk
  • 1 tbsp lime juice
  • 1 tbsp vegetable oil
  • Fresh coriander and lime wedges, to serve

🔪 Method

  1. Heat the oven to 200°C fan. Toss the potatoes with the oil and ½ tbsp spice blend, then roast for 20 minutes.
  2. Mix the coconut milk, lime juice and remaining spice blend.
  3. Add the tomatoes and onion to the tray, then nestle in the salmon.
  4. Pour the coconut mixture around the vegetables and spoon a little over the fish.
  5. Roast for 12–15 minutes until the salmon flakes and the potatoes are tender. Finish with coriander and lime.

🍽️ Serving Suggestions

  • Add steamed greens alongside.
  • Spoon the tray juices over jasmine rice.
