There is a particular sort of cooking that makes dinner feel like a little holiday: lemons on the chopping board, tomatoes roasting until sweet, olive oil glistening over warm bread and a table that somehow fills with “just one more thing”. Italian Seasoning is the one to reach for when tomatoes are bubbling, garlic bread is heading into the oven or a pan of pasta needs bringing together. It suits the sort of cooking that smells wonderful long before dinner reaches the table.

🫓 Za’atar: For Flatbreads, Eggs and “Just One More Bite”

Za’atar sits towards the eastern Mediterranean and Middle Eastern side of our flavour cupboard. It is especially good where olive oil, bread, yoghurt, eggs and roasted vegetables are involved—which, frankly, is an excellent place to be.

🔥 Harissa: The Smokier, Warmer Cousin

🍋 Sumac: The Little Finishing Trick

Sumac is slightly different from the blends above because it works beautifully as a finishing spice. Its tangy, fruity character gives food a citrus-like lift without adding liquid.

Scatter it over sliced onions, tomato and cucumber salad, hummus, grilled chicken, roasted vegetables or yoghurt. It is the sort of ingredient that makes people pause and ask, “What is that lovely flavour?”

Easy idea: mix natural yoghurt with a pinch of salt, a drizzle of olive oil and a generous dusting of sumac. Spoon it beside grilled food or roasted vegetables.

🐟 Fish Seasoning: Mediterranean Sunshine for Seafood

  • Harissa: add chickpeas and serve with couscous and cooling yoghurt.

That is the beauty of a good spice cupboard: you do not need completely different ingredients every night. Sometimes a different blend is enough to change the whole mood of dinner.
