Fish Seasoning Mediterranean Traybake

Colourful vegetables, tender white fish, olives and lemon roast together in one tray for a sunny Mediterranean-style dinner with minimal washing-up.

  • Serves: 4

🧂 Ingredients

  • 4 thick white fish fillets, such as cod or haddock
  • 1 courgette, thickly sliced
  • 1 red pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 250g cherry tomatoes
  • 80g pitted olives
  • 2 tbsp olive oil
  • 2½ tsp Fish Seasoning
  • 1 lemon, sliced
  • Fresh parsley or basil, to serve

🔪 Method

  1. Heat the oven to 200°C fan. Add the courgette, pepper, onion and tomatoes to a large roasting tin.
  2. Toss the vegetables with 1½ tbsp oil and 1 tsp Fish Seasoning, then roast for 15 minutes.
  3. Nestle the fish among the vegetables. Brush with the remaining oil and sprinkle over the remaining Fish Seasoning.
  4. Add the olives and lemon slices, then roast for 12–15 minutes until the fish is opaque and flakes easily.
  5. Scatter with fresh herbs and spoon the colourful tray juices over each serving.

🍽️ Serving Suggestions

  • Serve with warm crusty bread to catch the juices.
  • Add couscous, orzo or herby new potatoes.
  • Finish with crumbled feta if you fancy a creamy, salty contrast.
