🇬🇷 Crispy Greek-Style Roast Potatoes with Lemon

Crispy outside, fluffy inside and full of lemony herb flavour, these Greek-Style Roast Potatoes are the side dish everyone reaches for twice. Greek Seasoning, garlic and olive oil coat every golden edge, while a splash of stock keeps the centres tender. They are perfect with grilled meat, baked fish or a colourful vegetarian spread.

  • Cook time: 50–60 minutes

🧾 Ingredients

  • 1kg floury potatoes, such as Maris Piper, peeled and cut into chunky wedges
  • 2 tbsp Greek Seasoning
  • 4 tbsp olive oil
  • Juice of 1 lemon
  • 4 garlic cloves, lightly crushed
  • 150ml vegetable or chicken stock
  • ½ tsp black pepper
  • Fresh parsley and extra lemon wedges, to serve

🍳 Instructions

  1. Preheat the oven to 210°C, 190°C fan. Place a large roasting tin in the oven to heat.
  2. Parboil the potatoes in salted water for 7 minutes. Drain thoroughly, return them to the pan and shake gently to roughen the edges.
  3. Carefully add the potatoes to the hot roasting tin. Toss with the Greek Seasoning, olive oil, lemon juice, garlic and black pepper.
  4. Pour the stock around the potatoes, keeping the tops exposed. Roast for 45–55 minutes, turning once, until the stock has evaporated and the potatoes are deeply golden and crisp.
  5. Scatter with parsley and serve with fresh lemon wedges.
