🇬🇷 Greek-Seasoned Baked Salmon Traybake

This Greek-Seasoned Baked Salmon Traybake is bright, colourful and wonderfully easy. Tender salmon roasts alongside courgette, cherry tomatoes, red onion and olives, all brought together by our fragrant Greek Seasoning. A little feta and fresh lemon finish the tray with a salty, sunny flourish.

🧾 Ingredients

  • 4 salmon fillets, approximately 140g each
  • 2 courgettes, sliced into half-moons
  • 300g cherry tomatoes
  • 1 red onion, cut into thin wedges
  • 100g pitted Kalamata olives
  • 2 tbsp olive oil
  • 2 tbsp Greek Seasoning
  • 1 lemon, half sliced and half reserved for juice
  • 80g feta, crumbled
  • Black pepper, to taste

🍳 Instructions

  1. Preheat the oven to 200°C, 180°C fan. Add the courgettes, tomatoes, red onion and olives to a large roasting tray.
  2. Drizzle the vegetables with 1 tbsp olive oil, sprinkle over 1 tbsp Greek Seasoning and toss well. Roast for 10 minutes.
  3. Pat the salmon dry. Rub with the remaining oil and Greek Seasoning, then place among the vegetables with the lemon slices.
  4. Bake for 10–14 minutes, depending on the thickness of the salmon, until it flakes easily and is just cooked through.
  5. Squeeze over the reserved lemon juice, scatter with feta and serve immediately.

  • Serve with couscous, crusty bread or Greek-style roast potatoes.
  • Add a spoonful of yoghurt dip on the side.
  • Swap salmon for firm white fish and reduce the cooking time slightly.
