🔥 Jerk Salmon with Mango & Lime Salsa

This quick jerk salmon is full of bold Caribbean-inspired flavour but still feels fresh and light. The warmth of our Jerk Seasoning works beautifully with rich salmon, while mango, lime and coriander add a juicy, cooling contrast.

🥣 Ingredients

  • 4 salmon fillets
  • 2 tbsp Spice & Dipity Jerk Seasoning
  • 1 tbsp olive oil
  • 1 ripe mango, diced
  • 1 small red onion, finely diced
  • 1 lime, zest and juice
  • Small handful fresh coriander, chopped
  • 1 small red chilli, finely sliced, optional
  • Cooked rice or salad, to serve

🍳 Instructions

  1. Heat the oven to 200°C/180°C fan/Gas 6.
  2. Rub the salmon with olive oil and Jerk Seasoning, then place on a lined baking tray.
  3. Bake for 12–15 minutes, depending on thickness, until the salmon is just cooked through and flakes easily.
  4. Meanwhile, mix the mango, red onion, lime zest and juice, coriander and chilli if using.
  5. Spoon the mango salsa generously over the warm salmon and serve.

🍽️ Serving Suggestions

Lovely with coconut rice, a crunchy salad or roasted sweet potato wedges. For a lighter meal, serve over shredded lettuce with avocado.
