Caribbean Island Spice Black Bean Stuffed Peppers

Baked peppers filled with Caribbean-spiced rice, black beans, sweetcorn and tomatoes beneath melted golden cheese.

Caribbean Island Spice Black Bean Stuffed Peppers turn inexpensive cupboard ingredients into a colourful family meal. Rice, beans, sweetcorn and tomatoes soak up the aromatic seasoning beneath a bubbling golden topping. It is made easy with our Caribbean Island Spice.

🧾 Ingredients

  • 4 large peppers, halved lengthways and deseeded
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1½ tbsp Caribbean Island Spice
  • 250g cooked rice
  • 400g tin black beans, drained and rinsed
  • 150g sweetcorn
  • 200g chopped tomatoes
  • 100g grated mature Cheddar or plant-based alternative
  • 1 lime, cut into wedges
  • Fresh coriander, to serve

👩‍🍳 Instructions

  1. Heat the oven to 200°C/180°C fan/Gas 6. Arrange the pepper halves in a baking dish and bake for 15 minutes.
  2. Meanwhile, warm the oil in a frying pan and soften the onion for 5 minutes.
  3. Stir in the Caribbean Island Spice, rice, black beans, sweetcorn and tomatoes. Cook for 4–5 minutes.
  4. Spoon the filling into the peppers and scatter over the cheese.
  5. Bake for another 18–20 minutes until the peppers are tender and the topping is golden. Serve with lime and coriander.
