Caribbean Island Spice Banana Fritters
These Caribbean Island Spice Banana Fritters are crisp at the edges, soft in the middle and gently warmed with ginger, allspice and clove. Use only a little seasoning—the subtle chilli warmth makes the sweet banana flavour even more interesting. It is made easy with our Caribbean Island Spice.
🧾 Ingredients
- 3 ripe bananas
- 120g self-raising flour
- 1 tbsp soft brown sugar
- ½ tsp Caribbean Island Spice
- ½ tsp ground cinnamon
- 1 egg, beaten
- 2 tbsp milk or plant-based alternative
- Vegetable oil, for shallow frying
- 2 tbsp caster sugar
- 1 lime, finely grated zest
- Natural yoghurt or vanilla ice cream, to serve
👩🍳 Instructions
- Mash the bananas in a mixing bowl, leaving a little texture.
- Stir in the flour, brown sugar, Caribbean Island Spice, cinnamon, egg and milk to make a thick batter.
- Mix the caster sugar with the lime zest in a small bowl.
- Heat a thin layer of oil in a frying pan. Add heaped tablespoons of batter and cook for 2 minutes per side until golden.
- Drain briefly on kitchen paper, sprinkle with lime sugar and serve warm.
