Caribbean Island Spice Coconut Fish Stew

Caribbean coconut fish stew with tender white fish, tomatoes, red peppers and sweetcorn in a creamy aromatic broth.

This Caribbean Island Spice Coconut Fish Stew is creamy, colourful and surprisingly quick. Tender white fish cooks gently in a tomato and coconut broth filled with peppers, lime and warming island-inspired spice. It is made easy with our Caribbean Island Spice.

🧾 Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, finely sliced
  • 1 red pepper, sliced
  • 2 garlic cloves, crushed
  • 1½ tbsp Caribbean Island Spice
  • 400g tin chopped tomatoes
  • 400ml coconut milk
  • 500g firm white fish fillets, cut into large chunks
  • 150g frozen sweetcorn
  • 1 lime, juice only
  • Fresh coriander or parsley, to serve

👩‍🍳 Instructions

  1. Warm the oil in a wide saucepan and soften the onion and pepper for 6 minutes.
  2. Add the garlic and Caribbean Island Spice, then stir for 30 seconds.
  3. Pour in the tomatoes and coconut milk. Simmer uncovered for 10 minutes.
  4. Add the fish and sweetcorn, cover loosely and cook gently for 6–8 minutes until the fish flakes easily.
  5. Finish with lime juice and fresh herbs. Taste before adding any extra salt.
