Caribbean Island Spice Coconut Fish Stew
This Caribbean Island Spice Coconut Fish Stew is creamy, colourful and surprisingly quick. Tender white fish cooks gently in a tomato and coconut broth filled with peppers, lime and warming island-inspired spice. It is made easy with our Caribbean Island Spice.
🧾 Ingredients
- 1 tbsp vegetable oil
- 1 onion, finely sliced
- 1 red pepper, sliced
- 2 garlic cloves, crushed
- 1½ tbsp Caribbean Island Spice
- 400g tin chopped tomatoes
- 400ml coconut milk
- 500g firm white fish fillets, cut into large chunks
- 150g frozen sweetcorn
- 1 lime, juice only
- Fresh coriander or parsley, to serve
👩🍳 Instructions
- Warm the oil in a wide saucepan and soften the onion and pepper for 6 minutes.
- Add the garlic and Caribbean Island Spice, then stir for 30 seconds.
- Pour in the tomatoes and coconut milk. Simmer uncovered for 10 minutes.
- Add the fish and sweetcorn, cover loosely and cook gently for 6–8 minutes until the fish flakes easily.
- Finish with lime juice and fresh herbs. Taste before adding any extra salt.
