This simple and delicious spiced tomato soup is bright, warming, and full of South Indian-inspired heat. 🍅 Ingredients
  • 1 tbsp oil or butter
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tbsp tomato purée
  • 2 tsp Bangalore Curry Blend
  • 1 tin (400g) chopped tomatoes
  • 400ml vegetable stock
  • 1 tsp sugar (optional, to balance acidity)
  • Salt and pepper, to taste
  • Fresh cream or coconut milk (optional)
⏱ Prep & Cook Time
  • Prep time: 5 minutes
  • Cook time: 15–20 minutes
  • Serves: 2
🍳 How to Make
  1. Heat the oil or butter in a pan over medium heat. Add the onion and cook until soft.
  2. Stir in the garlic and tomato purée. Cook for 1 minute.
  3. Add the Bangalore Curry Blend and let the spices bloom for 30 seconds.
  4. Pour in the chopped tomatoes and vegetable stock. Stir well.
  5. Simmer for 10–15 minutes until the soup thickens slightly.
  6. Blend until smooth using a hand blender, or leave slightly chunky if you prefer.
  7. Season with salt, pepper and sugar if needed.
  8. Stir through a splash of cream or coconut milk for extra richness.
