If you love big flavour and serious heat, this Bangalore Fire Chicken Curry is for you. Made with our extra-hot Bangalore Curry Blend, it brings the bold warmth of South Western India straight to your table — rich, punchy, and surprisingly simple to make at home.
🧾 Ingredients
- 500g chicken thighs, cut into bite-sized pieces
- 2 tbsp Bangalore Curry Blend
- 1 onion, finely sliced
- 3 garlic cloves, crushed
- 1 tbsp ginger paste
- 2 tomatoes, chopped
- 200ml coconut milk
- 1 tbsp tomato purée
- 1 tbsp oil
- Salt, to taste
- Fresh coriander, to serve
⏱ Prep & Cook Time
- Prep time: 15 minutes
- Cook time: 30 minutes
- Serves: 3–4
🍳 Method
- Heat oil in a large pan over medium heat. Fry the onion until soft and golden.
- Add garlic and ginger paste; cook for 1–2 minutes until fragrant.
- Stir in the Bangalore Curry Blend and fry gently for 1 minute to release its aroma.
- Add the chicken and cook until lightly browned all over.
- Tip in the chopped tomatoes and tomato purée. Stir well and simmer for 5 minutes.
- Pour in the coconut milk, lower the heat and cook for 15–20 minutes until the chicken is tender and the sauce thickens.
- Season with salt and scatter over fresh coriander to finish.
🍽 Serving Suggestions
- Steamed basmati rice, warm naan or soft chapatis
- A cooling spoonful of yoghurt or simple cucumber raita to balance the heat
