🔥 Bangalore Chickpea & Spinach Curry
This simple and delicious Bangalore Chickpea & Spinach Curry is creamy, warming, and packed with vibrant South Indian-inspired flavour. Using our handcrafted Bangalore Curry Blend, it delivers gentle heat, rich aroma, and beautiful colour with very little effort — perfect for cosy evenings, quick weeknight dinners, or easy plant-based meals.
The magic comes from how the spices bloom with onions, garlic and ginger, creating a fragrant base that wraps around plump chickpeas and soft wilted spinach. Comforting, vibrant, and wonderfully straightforward to make.
🥕 Ingredients
  • 1 tbsp oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp Bangalore Curry Blend
  • 1 tin (400g) chopped tomatoes
  • 1 tin (400g) chickpeas, drained and rinsed
  • 200ml coconut milk or water
  • 2 large handfuls fresh spinach
  • Salt, to taste
  • Fresh coriander, to garnish

  • Prep time: 10 minutes
  • Cook time: 20 minutes
  • Serves: 2–3
🍳 How to Make
  1. Heat the oil in a pan over medium heat. Add the onion and cook for 5 minutes until soft and lightly golden.
  2. Stir in the garlic and ginger. Cook for 1 minute until fragrant.
  3. Add the Bangalore Curry Blend and coat the aromatics well.
  4. Pour in the chopped tomatoes and simmer for 2–3 minutes.
  5. Add the chickpeas and coconut milk. Stir and bring to a gentle simmer.
  6. Cook for 10 minutes, stirring occasionally, until the sauce thickens slightly.
  7. Fold in the fresh spinach and allow it to wilt.
  8. Season with salt and finish with fresh coriander.
