Singapore Seasoning Vegetable Egg Fried Rice
Singapore Seasoning Vegetable Egg Fried Rice is a colourful, budget-friendly dinner that turns leftover rice into something special. Eggs, vegetables and aromatic seasoning make it satisfying enough to serve on its own.
Made with our Singapore Seasoning, it is an easy way to add fragrant Asian-inspired flavour to everyday cooking.
🥣 Ingredients
- 500g cooked jasmine rice, chilled
- 4 eggs, beaten
- 2 tsp Singapore Seasoning
- 1 red pepper, diced
- 1 carrot, diced
- 100g frozen peas
- 100g sweetcorn
- 4 spring onions, sliced
- 2 tbsp light soy sauce
- 1 tbsp vegetable oil
- Lime wedges and sliced chilli, to serve
🍳 Instructions
- Heat half the oil in a large wok. Pour in the eggs and scramble until just set, then remove.
- Add the remaining oil, pepper and carrot. Stir-fry for 4 minutes.
- Add the peas, sweetcorn and Singapore Seasoning, cooking for another 2 minutes.
- Add the cold rice and stir-fry over a high heat for 4–5 minutes, breaking up any clumps.
- Return the egg, add the soy sauce and spring onions, then toss until piping hot. Serve with lime and chilli.

Serve alone or alongside grilled chicken, prawns or crispy tofu. Always chill leftover cooked rice quickly and keep refrigerated.
