🔥 Dante’s Inferno Loaded Sweet Potatoes
Soft baked sweet potatoes are naturally sweet enough to handle the ghost-pepper kick of Dante’s Inferno. Loaded with spiced black beans, sweetcorn, avocado and lime yoghurt, they make a colourful vegetarian dinner without any complicated cooking.
Heat warning: Dante’s Inferno contains ghost pepper. Begin with the stated minimum, avoid touching your eyes and wash your hands and utensils thoroughly after handling.
🧾 Ingredients
- 4 medium sweet potatoes
- 1 tbsp rapeseed oil
- 400g tin black beans, drained
- 150g sweetcorn
- 2 tomatoes, diced
- ⅛–¼ tsp Dante’s Inferno
- 1 tsp ground cumin
- 1 ripe avocado, diced
- 150g Greek or plant-based yoghurt
- Juice of 1 lime
- Fresh coriander, to serve
Instructions
- Heat the oven to 200°C fan / 220°C conventional. Prick the sweet potatoes and bake for 45–55 minutes until completely tender.
- Warm the oil in a frying pan. Add the beans, sweetcorn, tomatoes, cumin and ⅛ teaspoon Dante’s Inferno.
- Cook for 6–8 minutes until hot and slightly thickened. Taste cautiously before adding more seasoning.
- Mix the yoghurt with half the lime juice and a pinch of salt.
- Split the sweet potatoes and fluff the centres with a fork.
- Spoon over the bean mixture and finish with avocado, lime yoghurt, coriander and the remaining lime.

🍽️ Serving Suggestions
Serve with a crunchy green salad. Plant-based yoghurt makes the whole dish vegan as well as naturally gluten-free.
