🔥 Dante’s Inferno Halloumi & Pepper Skewers
Salty halloumi, sweet peppers and smoky char make a brilliant vegetarian match for Dante’s Inferno. The skewers carry a lively heat, while herby cous cous and cool yoghurt turn them into a generous, balanced dinner.
Heat warning: Dante’s Inferno contains ghost pepper. Begin with the stated minimum, avoid touching your eyes and wash your hands and utensils thoroughly after handling.
🧾 Ingredients
- 450g halloumi, cut into large cubes
- 1 red pepper and 1 yellow pepper, cut into pieces
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- ⅛–¼ tsp Dante’s Inferno
- 1 tsp runny honey
- Juice of 1 lemon
- 200g cous cous
- 250ml hot vegetable stock
- 3 tbsp chopped mint and parsley
- 150g Greek yoghurt
Instructions
- If using wooden skewers, soak them in water for 20 minutes.
- Mix the oil, honey, half the lemon juice and ⅛ teaspoon Dante’s Inferno.
- Thread the halloumi, peppers and onion onto skewers and brush with the spicy oil.
- Grill or barbecue for 8–10 minutes, turning carefully, until the vegetables soften and the halloumi is golden.
- Cover the cous cous with hot stock for 5 minutes, then fluff and stir through the herbs and remaining lemon juice.
- Taste before adding more Inferno. Serve the skewers over cous cous with yoghurt.

🍽️ Serving Suggestions
Add a tomato and cucumber salad or warm flatbreads. For a vegan version, use firm tofu in place of halloumi and plant-based yoghurt.
