This hearty Vindaloo Masala Red Lentil Dhal is warming, creamy, and full of bold Goan-inspired heat. Our Vindaloo Masala adds smoky spice, gentle tang and deep aromatic flavour that transforms simple lentils into a comforting, nourishing bowl. 🌶️

It's an easy one-pot recipe that's perfect for batch cooking, cosy evenings and quick midweek meals — rich, satisfying and ready in under 30 minutes.

🥣 Ingredients

  • 1 cup red lentils, rinsed
  • 1 tbsp Vindaloo Masala
  • 1 tsp turmeric
  • 1 onion, finely chopped
  • 3 garlic cloves, crushed
  • 1 inch fresh ginger, grated
  • 1 tin chopped tomatoes
  • 500–600ml vegetable stock
  • 1 tbsp oil or coconut oil
  • 150ml coconut milk (optional, for extra creaminess)
  • Salt & freshly ground black pepper, to taste
  • Fresh coriander or lime wedges, to serve

⏱ Prep & Cook Time

  • Prep time: 10 minutes
  • Cook time: 20–25 minutes

🍳 How to Make

  1. Heat the oil in a large saucepan and soften the onion for around 5 minutes.
  2. Add the garlic, ginger, turmeric and Vindaloo Masala. Cook for 1 minute until fragrant.
  3. Stir in the red lentils and chopped tomatoes.
  4. Pour in the vegetable stock and mix well.
  5. Simmer gently for 15–20 minutes, stirring occasionally, until the lentils are soft and creamy.
  6. Stir in the coconut milk if using, then season with salt and pepper.
  7. Add a little extra water if you'd like a thinner consistency.
  8. Finish with fresh coriander or a squeeze of lime before serving.
