  • 600g chicken thighs, cut into chunks
  • 2 tbsp Vindaloo Masala
  • 150g plain yoghurt
  • 2 tbsp white wine or apple cider vinegar
  • 1 large onion, finely sliced
  • 3 garlic cloves, grated
  • 1 inch fresh ginger, grated
  • 2 tbsp vegetable oil
  • 1 tin chopped tomatoes
  • 150–200ml water or stock
  • 1 tsp sugar (optional)
  • Salt, to taste
  • Fresh coriander, to serve

  • Prep: 15–20 minutes
  • Marinate: 30 minutes–overnight
  • Cook: 30–40 minutes

👩‍🍳 How to Make Vindaloo Masala Chicken Curry

  1. Mix yoghurt, vinegar, salt, and 1.5 tbsp Vindaloo Masala.
  2. Add chicken and marinate for at least 30 minutes.
  3. Cook onion in oil until golden.
  4. Add garlic, ginger, and the remaining 0.5 tbsp Vindaloo Masala.
  5. Stir in the marinated chicken and cook until sealed.
  6. Add tomatoes and water. Simmer 20–25 minutes.
  7. Adjust seasoning and consistency as needed.
  8. Finish with fresh coriander.
