This colourful Vindaloo Masala Sweet Potato & Spinach Curry is rich, bold and naturally comforting. It tastes slow-simmered but comes together surprisingly quickly. Once the sweet potatoes become tender and the spinach gently wilts into the silky sauce, you've got a hearty curry that's perfect for cosy evenings or easy meal prep.
π₯£ Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1Β½ tbsp Vindaloo Masala Spice Blend
- 1 onion, chopped
- 3 garlic cloves, crushed
- 1 inch fresh ginger, grated
- 400g tin chopped tomatoes
- 150ml coconut milk
- 2 large handfuls fresh spinach
- 1 tbsp olive or rapeseed oil
- 250β350ml vegetable stock
- Salt and freshly ground black pepper, to taste
- Fresh coriander, to serve

- Prep time: 10 minutes
- Cook time: 25β30 minutes

- Heat the oil in a large pan and gently soften the onion for around 5 minutes.
- Add the garlic, ginger and Vindaloo Masala Spice Blend, cooking for 1 minute until fragrant.
- Add the sweet potatoes and stir well to coat them in the spices.
- Pour in the chopped tomatoes and vegetable stock, then simmer for 15β20 minutes until the potatoes are tender.
- Stir through the coconut milk to create a silky, rich sauce.
- Fold in the spinach and cook just until wilted.
- Taste, adjust the seasoning if needed and finish with fresh coriander before serving.
