Turkey & White Bean Cassoulet with Turkey Seasoning

Rustic Turkey Seasoning turkey and white bean cassoulet with vegetables and golden breadcrumbs.

This rustic turkey and white bean cassoulet is a relaxed, weeknight-friendly take on the slow-cooked French classic. Turkey Seasoning brings rosemary, fennel, garlic and citrus depth to the tomato-rich sauce without a long list of dried herbs.

Turkey thigh stays tender as it simmers, while cannellini beans make the casserole substantial. A light breadcrumb crust gives the finished dish irresistible golden texture.

🧾 Ingredients

  • 1 tbsp olive oil
  • 500g boneless turkey thigh, cut into chunks
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 2 garlic cloves, chopped
  • 2 tbsp Turkey Seasoning
  • 1 tbsp tomato purée
  • 1 x 400g tin chopped tomatoes
  • 300ml chicken stock
  • 2 x 400g tins cannellini beans, drained
  • 60g fresh breadcrumbs
  • 2 tbsp chopped parsley

🍴 Instructions

  1. Heat the oven to 180°C fan / 200°C conventional.
  2. Heat the oil in a wide ovenproof casserole. Brown the turkey in batches, then transfer to a plate.
  3. Cook the onion, carrots and celery for 8 minutes. Add the garlic, Turkey Seasoning and tomato purée, then cook for 1 minute.
  4. Return the turkey to the pan and add the tomatoes and stock. Bring to a simmer, cover and cook in the oven for 30 minutes.
  5. Stir in the cannellini beans. Return to the oven uncovered for 15 minutes.
  6. Mix the breadcrumbs with parsley and scatter over the surface. Bake for another 10–15 minutes until golden and the turkey is tender.
  7. Rest for 5 minutes before serving.

🥗 Serving Suggestions

Serve in bowls with crusty bread and steamed greens. The cassoulet tastes even better the following day; reheat until piping hot.
