Mushroom & Chestnut Wellington with Turkey Seasoning
Despite its name, Turkey Seasoning is completely plant-based—and its rosemary, fennel, orange and garlic flavours are excellent with mushrooms. This golden Wellington uses Turkey Seasoning to give its chestnut filling the character of a traditional roast dinner.
The important step is cooking the mushrooms until dry, then cooling the filling completely. That keeps the pastry crisp and makes the Wellington easy to slice.
🧾 Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 500g chestnut mushrooms, finely chopped
- 2 garlic cloves, chopped
- 1½ tbsp Turkey Seasoning
- 180g cooked chestnuts, roughly chopped
- 100g baby spinach
- 1 tbsp Dijon mustard
- 1 x 320g sheet ready-rolled puff pastry, check vegan if required
- 2 tbsp oat milk, for glazing
- 1 tbsp sesame seeds, optional
🍴 Instructions
- Heat the oil in a large frying pan. Cook the onion for 6 minutes, then add the mushrooms and cook over medium-high heat for 12–15 minutes until their moisture has evaporated.
- Stir in the garlic and Turkey Seasoning for 1 minute. Add the chestnuts and spinach, cooking until the spinach wilts.
- Stir through the mustard, spread the filling on a tray and cool completely.
- Heat the oven to 200°C fan / 220°C conventional and line a baking tray.
- Unroll the pastry. Shape the filling into a compact log along the centre, fold over the pastry and seal the edges with oat milk. Place seam-side down.
- Score the top lightly, brush with oat milk and scatter with sesame seeds if using.
- Bake for 30–35 minutes until deeply golden. Rest for 10 minutes before slicing.

🥗 Serving Suggestions
Serve with roast potatoes, glazed carrots, green beans and vegetarian gravy. The filling can be made a day ahead and chilled.
