Creamy Turkey & Leek Cobbler with Turkey Seasoning
This bubbling turkey and leek cobbler is exactly the sort of dinner cold evenings call for. Turkey Seasoning gives the creamy filling savoury roast-dinner depth, while six rough scone cobbles turn crisp and golden on top.
It is particularly useful for leftover roast turkey, although cooked chicken works equally well. The topping is intentionally rustic, so there is no rolling or careful shaping required.
🧾 Ingredients
- 30g butter
- 2 leeks, thickly sliced
- 1½ tbsp Turkey Seasoning
- 30g plain flour
- 450ml chicken or turkey stock
- 100ml crème fraîche
- 450g cooked turkey, cut into chunks
- 150g frozen peas
- For the topping: 225g self-raising flour
- 50g cold butter, cubed
- 60g mature cheddar, grated
- 125ml milk
🍴 Instructions
- Heat the oven to 190°C fan / 210°C conventional.
- Melt 30g butter in a large ovenproof casserole. Cook the leeks for 6–8 minutes until softened.
- Stir in the Turkey Seasoning and plain flour for 1 minute. Gradually add the stock, stirring until smooth, then simmer for 4 minutes.
- Fold through the crème fraîche, cooked turkey and peas. Remove from the heat.
- For the topping, rub the cold butter into the self-raising flour. Stir in 40g cheddar, then add enough milk to make a soft dough.
- Divide the dough into six rough cobbles and sit them over the filling. Scatter over the remaining cheese.
- Bake for 25–30 minutes until the cobbles are risen and golden and the filling is bubbling. Rest for 5 minutes.

🥗 Serving Suggestions
Serve with steamed greens or glazed carrots. If starting with raw turkey, brown 500g diced thigh meat first and simmer it in the sauce for 15 minutes before adding the topping.
