Turkey Seasoning Burgers with Apple Slaw

Juicy Turkey Seasoning burger in a toasted bun with crisp apple and red cabbage slaw.

Lean turkey makes a lighter burger, but it needs confident seasoning and a little moisture to stay juicy. Turkey Seasoning supplies savoury herbs, garlic and orange, while grated apple keeps the patties tender from the inside.

A crunchy apple and red cabbage slaw continues the fresh flavour and provides all the contrast a golden burger needs. These cook just as well indoors as they do on the barbecue.

🧾 Ingredients

  • 500g turkey mince
  • 1 small eating apple
  • 50g fresh breadcrumbs
  • 1½ tbsp Turkey Seasoning
  • 1 egg, lightly beaten
  • 1 tbsp rapeseed oil
  • 4 brioche or seeded burger buns
  • Lettuce leaves, to serve
  • For the slaw: 150g red cabbage, finely shredded
  • 1 eating apple, cut into matchsticks
  • 3 tbsp natural yoghurt or mayonnaise
  • 1 tbsp cider vinegar
  • 1 tsp wholegrain mustard

🍴 Instructions

  1. Coarsely grate one apple and squeeze out the excess juice. Mix it gently with the turkey mince, breadcrumbs, Turkey Seasoning and egg.
  2. Shape into four even patties, make a shallow dip in each centre and chill for 15 minutes.
  3. For the slaw, combine the cabbage, apple matchsticks, yoghurt or mayonnaise, cider vinegar and mustard.
  4. Heat the oil in a frying pan over medium heat. Cook the burgers for 6–7 minutes on each side until golden and cooked through to 75°C.
  5. Toast the cut sides of the buns for 1 minute.
  6. Layer the buns with lettuce, a turkey burger and apple slaw, then serve immediately.

  • Cook: 15 minutes
  • Serves: 4

🥗 Serving Suggestions

Serve with potato wedges, corn on the cob or a large green salad. The uncooked patties can be covered and chilled for up to a day.
