Orange & Herb Roast Turkey Breast with Turkey Seasoning
A turkey breast joint gives you the generous flavour of a roast with easier carving and far less cooking time than a whole bird. Turkey Seasoning brings rosemary, garlic, fennel and orange peel together in one beautifully balanced rub.
Fresh orange and onions roast beneath the turkey and flavour the pan juices, producing a proper gravy with very little extra effort. It is just as welcome at Sunday lunch as it is on a smaller festive table.
🧾 Ingredients
- 1 boneless turkey breast joint, about 1.2kg
- 2 tbsp Turkey Seasoning
- 40g softened butter
- 1 orange
- 2 onions, cut into wedges
- 2 carrots, roughly chopped
- 300ml chicken or turkey stock
- 1 tbsp plain flour
- Freshly ground black pepper, to taste
🍴 Instructions
- Take the turkey out of the fridge 30 minutes before cooking. Heat the oven to 180°C fan / 200°C conventional.
- Finely grate half the orange zest and mix it with the butter and Turkey Seasoning. Rub the mixture evenly over the turkey.
- Arrange the onions and carrots in a roasting tin. Slice the orange into thick rounds, add half to the tin and sit the turkey on top. Pour 100ml stock around it.
- Roast for 1 hour 10 minutes to 1 hour 25 minutes, basting once, until the thickest part reaches 75°C. Cover loosely with foil if it browns too quickly.
- Transfer the turkey to a board, cover loosely and rest for 20 minutes.
- Spoon off excess fat from the tin. Stir the flour into the roasted vegetables and juices, then gradually whisk in the remaining stock. Simmer for 5 minutes and strain if desired.
- Slice the turkey and serve with the orange-scented gravy.

🥗 Serving Suggestions
Serve with roast potatoes, green vegetables and stuffing. Taste the gravy before adding salt because the seasoning and stock may already provide enough.
