🥦 Tikka Masala Roasted Cauliflower & Chickpea Traybake

This Tikka Masala Roasted Cauliflower and Chickpea Traybake turns simple vegetables into a colourful, flavour-packed meal. Our Tikka Masala spice blend coats every cauliflower floret and chickpea with warm, aromatic flavour while the hot oven creates deliciously crisp, lightly charred edges.

It is an easy meat-free dinner with very little washing up. Serve it straight from the roasting tray with rice, cous cous or warm flatbreads, then finish with lemon and a cooling spoonful of yoghurt.

🥣 Ingredients

  • 1 large cauliflower, cut into medium florets
  • 400g tin chickpeas, drained, rinsed and patted dry
  • 1 red pepper, cut into chunky pieces
  • 1 large red onion, cut into wedges
  • 3 tbsp olive or rapeseed oil
  • 2 tbsp Tikka Masala spice blend
  • 1 tbsp tomato purée
  • 1 tbsp lemon juice
  • ½ tsp salt, or to taste
  • Fresh coriander, to serve
  • Lemon wedges, to serve
  • Plain or plant-based yoghurt, optional

🍳 How to Make Tikka Masala Cauliflower & Chickpea Traybake

  1. Preheat your oven to 200°C fan. Place a large, sturdy roasting tray in the oven while it heats.
  2. Put the oil, Tikka Masala, tomato purée, lemon juice and salt into a large bowl. Mix to form a loose, fragrant coating.
  3. Add the cauliflower, chickpeas, red pepper and red onion. Toss thoroughly until everything is evenly coated with the spiced oil.
  4. Carefully remove the hot tray from the oven and spread the mixture across it in a single layer. Leave a little room between the vegetables rather than crowding them.
  5. Roast for 20 minutes, then turn the cauliflower and stir the chickpeas and vegetables.
  6. Return the tray to the oven for another 15–20 minutes, until the cauliflower is tender with browned edges, the peppers have softened and some of the chickpeas are lightly crisp.
  7. Taste and add a little more salt or lemon juice if needed.
  8. Scatter with fresh coriander and serve with lemon wedges and yoghurt, if using.

Turn the traybake into a satisfying dinner with basmati rice, cous cous or warm naan. It is also delicious spooned into flatbreads with shredded lettuce and yoghurt, or served alongside grilled chicken or fish.

Heating the roasting tray first helps the vegetables begin browning as soon as they touch the metal. Drying the chickpeas encourages them to crisp, while leaving space between the ingredients allows hot air to circulate.
