Thai Seven Spice Sweet Potato & Coconut Soup

Thai Seven Spice sweet potato and coconut soup with coconut swirl, coriander, red chilli, toasted seeds and lime.

This Thai Seven Spice Sweet Potato and Coconut Soup is smooth, warming and full of colour. Sweet potato and coconut milk mellow the aromatic spices, while lime, coriander and chilli lift every spoonful.

Made with our Thai Seven Spice Blend, it is an easy way to bring fragrant Southeast Asian-inspired flavour to everyday cooking.

🥣 Ingredients

  • 800g sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 20g fresh ginger, grated
  • 2 tsp Thai Seven Spice Blend
  • 400ml coconut milk
  • 700ml vegetable stock
  • Juice of 1 lime
  • 1 tbsp vegetable oil
  • Fresh coriander, sliced chilli and toasted seeds, to serve
  • Salt and black pepper, to taste

🍳 Instructions

  1. Heat the oil in a large saucepan. Add the onion and cook gently for 5 minutes until softened.
  2. Add the garlic, ginger and Thai Seven Spice Blend. Cook for 1 minute until fragrant.
  3. Add the sweet potatoes, coconut milk and vegetable stock. Bring to the boil, then reduce the heat and simmer for 20 minutes until the potato is completely tender.
  4. Blend the soup until smooth using a stick blender. Add a splash of water if you prefer a thinner consistency.
  5. Stir in the lime juice, then season with salt and black pepper to taste.
  6. Ladle into bowls and finish with coconut milk, coriander, sliced chilli and toasted seeds.

  • Serves: 4–6

🍽️ Serving Suggestions

Serve with warm flatbread, prawn crackers or a crunchy cucumber salad. The soup keeps well in the fridge for three days and can be frozen.
