Thai Seven Spice Salmon with Coconut Lime Rice

Thai Seven Spice Salmon with Coconut Lime Rice turns a simple salmon supper into something vibrant and aromatic. The salmon roasts until golden while the fragrant rice cooks gently underneath the lid—easy enough for midweek, but smart enough for guests.

Made with our Thai Seven Spice Blend, it is an easy way to bring fragrant Southeast Asian-inspired flavour to everyday cooking.

🥣 Ingredients

  • 4 salmon fillets
  • 2 tsp Thai Seven Spice Blend
  • 1 tbsp vegetable oil
  • 250g jasmine rice, rinsed
  • 200ml coconut milk
  • 300ml water
  • Finely grated zest and juice of 1 lime
  • 200g tenderstem broccoli or green beans
  • ½ cucumber, cut into ribbons
  • Fresh coriander, to serve
  • Salt, to taste

🍳 Instructions

  1. Heat the oven to 200°C/180°C fan/gas 6. Place the salmon on a lined baking tray, rub with oil and sprinkle evenly with Thai Seven Spice Blend.
  2. Roast the salmon for 12–15 minutes, depending on thickness, until just cooked through.
  3. Meanwhile, place the rice, coconut milk, water and a pinch of salt in a saucepan. Bring to a gentle simmer, cover and cook on low for 12 minutes.
  4. Remove the rice from the heat and leave covered for 5 minutes. Fluff with a fork, then stir through the lime zest and juice.
  5. Steam the broccoli or green beans until tender-crisp.
  6. Serve the salmon over coconut lime rice with the greens, cucumber ribbons, coriander and extra lime.

🍽️ Serving Suggestions

Add a spoonful of chilli sauce, a cucumber salad or steamed pak choi. The coconut rice also works beautifully with prawns or tofu.
