Thai Seven Spice Coconut Prawn Curry

Thai Seven Spice coconut prawn curry with peppers, tomatoes, spinach, coriander, rice and lime.

This Thai Seven Spice Coconut Prawn Curry is creamy, colourful and wonderfully quick. Juicy prawns, peppers, tomatoes and spinach simmer in a fragrant coconut sauce that is perfect for scooping over hot jasmine rice.

Made with our Thai Seven Spice Blend, it is an easy way to bring fragrant Southeast Asian-inspired flavour to everyday cooking.

🥣 Ingredients

  • 400g raw king prawns, peeled
  • 1½ tbsp Thai Seven Spice Blend
  • 1 onion, finely sliced
  • 1 red pepper, sliced
  • 200g cherry tomatoes, halved
  • 400ml coconut milk
  • 100ml vegetable or fish stock
  • 100g baby spinach
  • 1 tbsp fish sauce or light soy sauce
  • Juice of 1 lime
  • 1 tbsp vegetable oil
  • Fresh coriander, sliced chilli and rice, to serve

🍳 Instructions

  1. Heat the oil in a deep frying pan and gently cook the onion for 5 minutes until softened.
  2. Add the red pepper and Thai Seven Spice Blend. Cook for 2 minutes until fragrant.
  3. Pour in the coconut milk and stock, then add the tomatoes. Simmer gently for 8–10 minutes.
  4. Add the prawns and cook for 3–4 minutes until pink and cooked through.
  5. Stir in the spinach, fish sauce or soy sauce and lime juice. Cook just until the spinach wilts.
  6. Taste, adjust the seasoning and serve with jasmine rice, coriander and sliced chilli.

Serve with jasmine rice, noodles or warm flatbread. For extra freshness, add cucumber ribbons or a quick lime-dressed salad.
