Moroccan Tagine Roasted Vegetable Cous Cous brings warm North African-inspired flavour to an approachable home-cooked meal. Our Moroccan Tagine Spice Blend creates aromatic depth without needing a cupboard full of separate spices.
🥣 Ingredients
- 1 aubergine, chopped
- 1 courgette, chopped
- 1 red pepper, chopped
- 1 red onion, cut into wedges
- 400g tin chickpeas, drained
- 2 tbsp Moroccan Tagine Spice Blend
- 2 tbsp olive oil
- 200g cous cous
- 250ml hot vegetable stock
- Lemon, herbs and pomegranate
🍳 How to Make It
- Heat the oven to 200°C fan.
- Toss the vegetables and chickpeas with the oil and seasoning. Roast for 30–35 minutes, turning once.
- Cover the cous cous with stock and leave for 8 minutes. Fluff with a fork.
- Mix the cous cous with lemon juice and herbs.
- Top with the roasted vegetables and finish with pomegranate.
