🥣 Ingredients
- 600g firm white fish fillets
- 2 tbsp Moroccan Tagine Spice Blend
- 1 onion, sliced
- 1 red pepper, sliced
- 2 garlic cloves, chopped
- 400g tin chopped tomatoes
- 100ml vegetable stock
- 1 tbsp olive oil
- Juice of ½ lemon
- Fresh coriander
🍳 How to Make It
- Soften the onion and pepper in the oil for 8 minutes.
- Add the garlic and seasoning; stir for 1 minute.
- Add the tomatoes and stock. Simmer uncovered for 15 minutes.
- Nestle the fish into the sauce, cover and cook gently for 8–10 minutes until it flakes easily.
- Add lemon juice and coriander, then serve with cous cous or crusty bread.
