Moroccan Tagine Lamb with Apricots & Almonds
Moroccan Tagine Lamb with Apricots & Almonds brings warm North African-inspired flavour to an approachable home-cooked meal. Our Moroccan Tagine Spice Blend creates aromatic depth without needing a cupboard full of separate spices.
🥣 Ingredients
- 700g diced lamb shoulder
- 2 tbsp Moroccan Tagine Spice Blend
- 1 onion, sliced
- 2 garlic cloves, chopped
- 400g tin chopped tomatoes
- 350ml lamb or beef stock
- 120g dried apricots
- 2 tbsp toasted almonds
- 1 tbsp olive oil
- Fresh parsley or coriander
🍳 How to Make It
- Brown the lamb in batches in the oil, then set aside.
- Cook the onion for 7 minutes. Add the garlic and seasoning for 1 minute.
- Return the lamb; add the tomatoes and stock. Cover and simmer gently for 75 minutes.
- Add the apricots and cook uncovered for 20–25 minutes until the lamb is tender and the sauce thickens.
- Finish with almonds and herbs.
