🥕 Garam Masala Roasted Vegetable & Chickpea Bowl
This Garam Masala Roasted Vegetable and Chickpea Bowl is colourful, filling and packed with warm aromatic flavour. Sweet potato, cauliflower, courgette, red onion and chickpeas are roasted with our Garam Masala blend until tender with crisp, caramelised edges.
Serve everything over fluffy cous cous with a fresh lemon yoghurt drizzle for an easy meat-free lunch or dinner.
🥣 Ingredients
- 1 medium sweet potato, cut into 2cm pieces
- ½ cauliflower, cut into florets
- 1 courgette, cut into thick half-moons
- 1 red onion, cut into wedges
- 400g tin chickpeas, drained, rinsed and dried
- 3 tbsp olive or rapeseed oil
- 2 tbsp Garam Masala blend
- ½ tsp salt
- 250g cous cous
- 300ml hot vegetable stock
- 150g plain or plant-based yoghurt
- Juice of ½ lemon
- Fresh coriander, to serve
⏱ Timings
- Preparation: 15 minutes
- Cooking: 35–40 minutes

🍳 How to Make a Garam Masala Vegetable & Chickpea Bowl
- Preheat the oven to 200°C fan and place a large roasting tray inside to heat.
- Toss the sweet potato, cauliflower, courgette, onion and chickpeas with the oil, Garam Masala and salt.
- Spread everything across the hot tray in a single layer. Roast for 20 minutes, turn, then roast for another 15–20 minutes until tender and browned.
- Place the cous cous in a heatproof bowl, pour over the stock, cover and leave for 5–8 minutes. Fluff with a fork.
- Mix the yoghurt with the lemon juice and a small pinch of salt.
- Divide the cous cous between bowls, add the roasted vegetables and chickpeas, then finish with the yoghurt drizzle and coriander.
🍽 Serving Suggestions
Add toasted almonds, pumpkin seeds or mango chutney. For a vegan meal, use plant-based yoghurt or a simple tahini and lemon dressing.
