🍲 Garam Masala Chicken & Potato Stew

This Garam Masala Chicken and Potato Stew is hearty, aromatic and made for cooler evenings. Tender chicken thighs, chunky potatoes and carrots simmer in a thick tomato gravy flavoured with our Garam Masala blend.

It is a relaxed one-pot dinner that becomes even more flavoursome when made ahead and gently reheated.

🥣 Ingredients

  • 2 tbsp vegetable or rapeseed oil
  • 700g boneless, skinless chicken thighs, cut into large pieces
  • 1 large onion, finely chopped
  • 3 garlic cloves, crushed
  • 1 tbsp grated fresh ginger
  • 2 tbsp Garam Masala blend
  • 1 tbsp tomato purée
  • 400g tin chopped tomatoes
  • 400ml chicken stock
  • 500g potatoes, cut into chunks
  • 2 carrots, thickly sliced
  • Salt, to taste
  • Fresh coriander, to serve

🍳 How to Make Garam Masala Chicken & Potato Stew

  1. Heat 1 tablespoon of oil in a large casserole. Brown the chicken in batches for 5–6 minutes, then transfer to a plate.
  2. Add the remaining oil and onion. Cook gently for 8 minutes until softened.
  3. Add the garlic, ginger and Garam Masala. Cook for 1 minute, then stir in the tomato purée.
  4. Add the chopped tomatoes, stock, potatoes and carrots. Return the chicken and any resting juices to the pan.
  5. Bring to a gentle simmer, cover loosely and cook for 30 minutes.
  6. Remove the lid and simmer for another 10–15 minutes until the potatoes are tender and the gravy has thickened.
  7. Check the chicken is thoroughly cooked, season to taste and finish with coriander.

🍽 Serving Suggestions

Serve in deep bowls with naan or crusty bread. A spoonful of yoghurt and a squeeze of lemon provide a fresh contrast to the rich gravy.
