Creamy Cajun Chicken Pasta

Creamy, smoky and wonderfully comforting, this Cajun chicken pasta brings golden chicken, peppers and a silky sauce together in just one pan.

🧂 Ingredients

  • 300g penne pasta
  • 500g chicken breast, sliced
  • 2 tbsp Cajun Spice
  • 1 tbsp olive oil
  • 1 red pepper, sliced
  • 2 garlic cloves, finely chopped
  • 200ml chicken stock
  • 150ml double cream
  • 40g grated Parmesan
  • Fresh parsley, to serve

🔪 Method

  1. Cook the pasta in salted water until just tender, reserving a mugful of cooking water before draining.
  2. Toss the chicken with 1½ tbsp Cajun Spice. Heat the oil in a large frying pan and cook for 5–6 minutes until golden and cooked through. Transfer to a plate.
  3. Add the pepper to the same pan and cook for 4 minutes. Stir in the garlic and remaining Cajun Spice for 30 seconds.
  4. Pour in the stock and cream, simmer gently for 3–4 minutes, then stir in the Parmesan.
  5. Return the chicken and pasta to the pan. Toss until glossy, adding a splash of pasta water if needed, then finish with parsley.

  • Serve with garlic bread and a simple salad.
  • Finish with a squeeze of lemon to brighten the creamy sauce.
