Cajun Salmon with Lime
Golden Cajun salmon with fresh lime is colourful, quick and full of flavour, making it just as suitable for a speedy dinner as relaxed weekend cooking.

🧂 Ingredients
- 4 salmon fillets
- 2 tsp Cajun Spice
- 1 tbsp olive oil
- 1 lime, zest and juice
- 250g cooked rice, to serve
- 150g sweetcorn
- 150g cherry tomatoes, quartered
- 2 spring onions, sliced
- Fresh coriander or parsley, to serve
🔪 Method
- Pat the salmon dry, brush with oil and sprinkle evenly with Cajun Spice and half the lime zest.
- Heat a large non-stick frying pan over a medium-high heat. Cook the salmon skin-side down for 5–6 minutes.
- Turn carefully and cook for another 3–5 minutes, depending on thickness, until just cooked through.
- Mix the sweetcorn, tomatoes, spring onions, remaining lime zest and half the lime juice to make a fresh salsa.
- Serve the salmon with warm rice and salsa, then squeeze over the remaining lime juice and add fresh herbs.
