Cajun Prawn Rice
Juicy prawns, fluffy rice and colourful peppers make this lively one-pan meal taste wonderfully generous while remaining quick enough for a weekday.

🧂 Ingredients
- 300g raw peeled king prawns
- 250g long-grain rice, rinsed
- 1½ tbsp Cajun Spice
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 red pepper, diced
- 2 garlic cloves, finely chopped
- 600ml hot vegetable or chicken stock
- 4 spring onions, sliced
- Fresh parsley and lime wedges, to serve
🔪 Method
- Heat half the oil in a wide lidded pan. Toss the prawns with ½ tbsp Cajun Spice and cook for 1–2 minutes on each side until nearly done. Transfer to a plate.
- Add the remaining oil, onion and pepper to the pan. Cook gently for 5 minutes, then stir in the garlic and remaining Cajun Spice.
- Add the rice and stock, stir once and bring to a simmer. Cover and cook gently for 15 minutes.
- Lay the prawns on top, cover again and cook for 3–4 minutes until the rice is tender and the prawns are piping hot.
- Fluff the rice with a fork and finish with spring onions, parsley and lime.

- Add sweetcorn or peas with the stock.
- Serve with a crunchy green salad.
- Offer hot sauce at the table for anyone who enjoys extra heat.
