Cajun Chicken & Pepper Traybake

Juicy chicken, colourful peppers and golden potatoes roast together with smoky Cajun warmth in this easy, family-friendly one-tray dinner.

  • Cook time: 40–45 minutes
  • Serves: 4

🧂 Ingredients

  • 700g boneless chicken thighs
  • 600g baby potatoes, halved
  • 1 red pepper, cut into chunks
  • 1 yellow pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 2½ tbsp Cajun Spice
  • 1 lemon, cut into wedges
  • Fresh parsley, to serve

🔪 Method

  1. Heat the oven to 200°C fan. Put the potatoes in a large roasting tin, toss with 1 tbsp oil and 1 tbsp Cajun Spice, then roast for 15 minutes.
  2. Add the peppers and onion. Turn everything well and make space for the chicken.
  3. Coat the chicken with the remaining oil and Cajun Spice, then nestle it among the vegetables.
  4. Roast for 25–30 minutes until the chicken is cooked through and the vegetables are golden at the edges.
  5. Squeeze over fresh lemon, scatter with parsley and serve straight from the tray.

  • Add a crisp green salad or steamed sweetcorn.
  • Serve with cooling natural yoghurt if you prefer gentler heat.
  • Use leftovers in wraps or grain bowls the following day.
