Braai Loaded Sweet Potatoes
Braai Loaded Sweet Potatoes combine crisp-skinned baked potatoes with smoky black beans, sweetcorn, avocado and cooling yoghurt. They are colourful, filling and easy to adapt for vegetarian or fully plant-based cooking. The flavour comes from our Braai South African Hot Spice.
🧾 Ingredients
- 4 medium sweet potatoes
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 red pepper, diced
- 1½ tbsp Braai South African Hot Spice
- 400g tin black beans, drained and rinsed
- 150g sweetcorn
- 200g chopped tomatoes
- 1 avocado, diced
- 4 tbsp natural yoghurt or plant-based alternative
- 1 lime, cut into wedges
- Fresh coriander, to serve
👩🍳 Instructions
- Heat the oven to 200°C/180°C fan/Gas 6. Prick the sweet potatoes and bake for 45–60 minutes until tender.
- Meanwhile, warm the olive oil in a frying pan and soften the onion and pepper for 6 minutes.
- Add the Braai spice and stir for 30 seconds. Add the black beans, sweetcorn and tomatoes, then simmer for 8–10 minutes.
- Split the baked sweet potatoes and fluff the centres with a fork.
- Spoon over the smoky bean mixture and finish with avocado, yoghurt, lime and coriander.
