🍤 Taco-Spiced Prawn & Avocado Rice Bowls
These Taco-Spiced Prawn and Avocado Rice Bowls are fresh, colourful and ready in around half an hour. Juicy prawns are cooked quickly with our Mexican Taco Spice, then served with rice, black beans, sweetcorn, tomato and creamy avocado.
They deliver plenty of flavour while still feeling bright and balanced.
🥣 Ingredients
- 300g raw peeled king prawns
- 1½ tbsp Mexican Taco Spice
- 1 tbsp vegetable or rapeseed oil
- 250g basmati or long-grain rice
- 400g tin black beans, drained and rinsed
- 150g sweetcorn
- 2 ripe tomatoes, diced
- 1 ripe avocado, diced
- Juice of 1 lime
- Salt, to taste
⏱ Timings
- Preparation: 15 minutes
- Cooking: 20 minutes
- Serves: 4
🍳 How to Make Taco-Spiced Prawn & Avocado Rice Bowls
- Cook the rice according to the packet instructions. Drain if required, then keep warm.
- Stir the black beans and sweetcorn through the hot rice with half the lime juice and a pinch of salt.
- Pat the prawns dry and toss with the Mexican Taco Spice.
- Heat the oil in a wide frying pan over a high heat. Cook the prawns for 3–5 minutes, turning once, until pink and cooked through.
- Divide the rice between bowls. Add the tomato, avocado and hot prawns, then finish with the remaining lime juice.
🥗 Serving Suggestions
Add shredded lettuce, tomato salsa or cooling yoghurt. Replace the prawns with firm tofu cubes for a plant-based variation.
