🧀 Loaded Taco-Spiced Nachos

These Loaded Taco-Spiced Nachos layer crisp tortilla chips with smoky seasoned beef, black beans, tomato and properly melted cheese. Our Mexican Taco Spice gives the topping plenty of character without masking the fresh ingredients.

Serve the tray in the middle of the table for a relaxed weekend meal or generous sharing platter.

🥣 Ingredients

  • 400g beef mince
  • 2 tbsp Mexican Taco Spice
  • 1 tbsp vegetable or rapeseed oil
  • 1 onion, finely chopped
  • 1 tbsp tomato purée
  • 400g tin black beans, drained and rinsed
  • 200g plain tortilla chips
  • 200g mature cheddar, grated
  • 2 ripe tomatoes, diced
  • 3 spring onions, finely sliced
  • Tomato salsa and soured cream, to serve

  • Preparation: 15 minutes
  • Cooking: 20 minutes
  • Serves: 4 as a main or 6 as a snack

🍳 How to Make Loaded Taco-Spiced Nachos

  1. Preheat the oven to 200°C fan. Heat the oil and cook the onion for 5 minutes.
  2. Add the beef and brown for 6–8 minutes. Stir in the Mexican Taco Spice and tomato purée, then add the black beans and cook for 3 minutes.
  3. Spread half the tortilla chips over a large ovenproof tray. Add half the beef mixture and half the cheese.
  4. Repeat the layers, leaving some chip edges exposed so they remain crisp.
  5. Bake for 8–10 minutes until the cheese has melted. Finish with diced tomato and spring onion.

🥑 Serving Suggestions

Serve immediately with salsa, soured cream, avocado and lime. For a meat-free version, replace the beef with an extra tin of beans and 200g finely diced mushrooms.

Layering rather than simply topping the chips distributes the filling and cheese properly. Keeping the beef mixture fairly dry and adding fresh tomato after baking protects the crisp texture.
