Steak Spice Sirloin with Garlic Herb Butter

Sliced seasoned sirloin steak with melting garlic herb butter, green beans and roasted tomatoes.

This is the sort of steak dinner that feels special without demanding a complicated sauce. Our Steak Spice builds a deeply savoury crust, while homemade garlic herb butter melts into every rested slice.

The key is a properly hot pan, dry meat and a patient rest before slicing. Those three small details deliver a juicy centre and rich caramelised outside.

🧾 Ingredients

  • 2 sirloin steaks, about 250g each
  • 1½ tbsp Steak Spice
  • 1 tbsp rapeseed or olive oil
  • 50g unsalted butter, softened
  • 1 small garlic clove, finely grated
  • 1 tbsp finely chopped parsley
  • Green beans and roasted tomatoes, to serve

🍴 Instructions

  1. Take the steaks out of the fridge 30 minutes before cooking. Pat them completely dry.
  2. Mix the softened butter with the garlic and parsley. Shape into a small log in baking paper and chill.
  3. Rub the steaks with the oil, then coat evenly with Steak Spice.
  4. Heat a heavy frying pan until very hot. Cook the steaks for 2–3 minutes per side for medium-rare, adjusting for thickness and preferred doneness.
  5. Transfer to a warm plate, top with slices of garlic herb butter and rest loosely covered for 7–10 minutes.
  6. Slice across the grain and serve with the resting juices spooned over.
