Steak Spice Portobello Burgers with Blue Cheese
Portobello mushrooms are brilliant carriers for bold seasoning, which makes them a natural partner for Steak Spice. They turn juicy and deeply savoury on the grill while keeping a satisfying, substantial bite.
Roasted pepper adds sweetness and blue cheese adds tang, creating a vegetarian burger that feels like the main event rather than a compromise.
🧾 Ingredients
- 4 large portobello mushrooms
- 1½ tbsp Steak Spice
- 2 tbsp olive oil
- 2 roasted red peppers from a jar, drained
- 100g blue cheese, crumbled
- 4 seeded burger buns
- 2 handfuls rocket
- 4 tbsp natural yoghurt or mayonnaise
- 1 tsp lemon juice
🍴 Instructions
- Remove the mushroom stalks and gently wipe the caps clean.
- Mix the Steak Spice with the olive oil and brush over both sides of each mushroom.
- Cook on a medium-hot barbecue or griddle, gill-side down first, for 4–5 minutes per side.
- Add the blue cheese to the gill side for the final 2 minutes and cover briefly so it softens.
- Mix the yoghurt or mayonnaise with the lemon juice. Lightly toast the buns.
- Layer the rocket, mushrooms, roasted pepper and lemon dressing in the buns. Serve immediately.
