Steak Spice Beef & Mushroom Stroganoff
Stroganoff is rich, comforting and surprisingly quick when the beef is cooked in small batches. Our Steak Spice adds garlic, pepper and savoury depth without requiring a cupboard full of seasonings.
Soured cream gives the sauce its familiar gentle tang, while chestnut mushrooms make the dish feel generous without overwhelming the tender beef.
🧾 Ingredients
- 500g sirloin or rump steak, cut into thin strips
- 1½ tbsp Steak Spice
- 1 tbsp olive oil
- 20g butter
- 1 onion, finely sliced
- 250g chestnut mushrooms, sliced
- 1 garlic clove, finely chopped
- 150ml beef stock
- 1 tsp Dijon mustard
- 150ml soured cream
- 300g tagliatelle
- Chopped parsley, optional
🍴 Instructions
- Cook the tagliatelle according to the packet instructions. Reserve a mugful of pasta water, then drain.
- Pat the beef dry and toss with the Steak Spice.
- Heat half the oil in a large frying pan over high heat. Sear the beef in two batches for 60–90 seconds, then transfer to a plate.
- Reduce the heat to medium. Add the remaining oil and butter, then cook the onion and mushrooms for 7–8 minutes until golden.
- Stir in the garlic, beef stock and mustard. Simmer for 3 minutes.
- Lower the heat and stir in the soured cream. Return the beef and its juices for 1 minute, loosening with a splash of pasta water if needed. Do not boil.
- Serve with the tagliatelle and parsley if using.

🥗 Serving Suggestions
Tagliatelle is excellent for catching the sauce, but rice, mash or crusty bread work equally well.
