Soul Food Prawns with Creamy Grits
Juicy spiced prawns, creamy grits and a quick tomato-and-pepper pan sauce make an indulgent-looking dinner that is surprisingly straightforward to cook. Made with Soul Food Seasoning.
🥣 Ingredients
- 400g raw king prawns, peeled
- 1½ tbsp Soul Food Seasoning
- 1 tbsp olive oil
- 1 red pepper, diced
- 2 garlic cloves, crushed
- 200g cherry tomatoes, halved
- 250ml chicken or vegetable stock
- 150g quick-cook grits or fine polenta
- 600ml milk
- 40g mature Cheddar, grated
- 25g butter
- Spring onions and lemon wedges, to serve
Instructions
- Bring the milk to a gentle simmer. Whisk in the grits or polenta and cook according to the packet instructions until thick and creamy.
- Stir the cheese and half the butter into the grits, season to taste and keep warm over very low heat.
- Toss the prawns with 1 tbsp seasoning. Heat the oil in a wide pan and cook the prawns for 2 minutes per side, then transfer to a plate.
- Add the pepper, garlic and tomatoes to the pan. Cook for 4 minutes, then add the stock and remaining seasoning. Bubble until slightly reduced.
- Return the prawns briefly to warm through. Spoon over the creamy grits and finish with spring onions and lemon.

🍽️ Serving Suggestions
Serve immediately with wilted greens or charred sweetcorn and plenty of lemon.
