Soul Food Prawns with Creamy Grits

Soul Food-spiced king prawns with tomato and peppers served over creamy grits with spring onions and lemon.

Juicy spiced prawns, creamy grits and a quick tomato-and-pepper pan sauce make an indulgent-looking dinner that is surprisingly straightforward to cook. Made with Soul Food Seasoning.

🥣 Ingredients

  • 400g raw king prawns, peeled
  • 1½ tbsp Soul Food Seasoning
  • 1 tbsp olive oil
  • 1 red pepper, diced
  • 2 garlic cloves, crushed
  • 200g cherry tomatoes, halved
  • 250ml chicken or vegetable stock
  • 150g quick-cook grits or fine polenta
  • 600ml milk
  • 40g mature Cheddar, grated
  • 25g butter
  • Spring onions and lemon wedges, to serve

Instructions

  1. Bring the milk to a gentle simmer. Whisk in the grits or polenta and cook according to the packet instructions until thick and creamy.
  2. Stir the cheese and half the butter into the grits, season to taste and keep warm over very low heat.
  3. Toss the prawns with 1 tbsp seasoning. Heat the oil in a wide pan and cook the prawns for 2 minutes per side, then transfer to a plate.
  4. Add the pepper, garlic and tomatoes to the pan. Cook for 4 minutes, then add the stock and remaining seasoning. Bubble until slightly reduced.
  5. Return the prawns briefly to warm through. Spoon over the creamy grits and finish with spring onions and lemon.

🍽️ Serving Suggestions

Serve immediately with wilted greens or charred sweetcorn and plenty of lemon.
