Orange-Glazed Soul Food Pork Ribs
Slow-baked pork ribs become meltingly tender before a sticky orange-and-spice glaze turns glossy and caramelised in the oven. These are made for sharing. Made with Soul Food Seasoning.
🥣 Ingredients
- 1.5kg pork spare ribs
- 2 tbsp Soul Food Seasoning
- 1 tbsp vegetable oil
- 150ml orange juice
- Finely grated zest of 1 orange
- 2 tbsp runny honey
- 2 tbsp tomato ketchup
- 1 tbsp cider vinegar
- 800g sweet potatoes, cut into wedges
- 1 tbsp olive oil
- Fresh slaw, to serve
Instructions
- Heat the oven to 160°C/140°C fan/gas 3. Rub the ribs with the vegetable oil and 1½ tbsp seasoning. Place in a roasting tin, cover tightly with foil and bake for 2 hours.
- Mix the orange juice, zest, honey, ketchup, vinegar and remaining seasoning in a small saucepan. Simmer for 8–10 minutes until syrupy.
- Toss the sweet potato wedges with olive oil and a pinch of seasoning. Increase the oven to 220°C/200°C fan/gas 7 and roast for 30–35 minutes.
- Uncover the ribs and brush generously with glaze. Roast for 15 minutes, glaze again, then roast for another 10–15 minutes until sticky and caramelised.
- Rest the ribs for 10 minutes before slicing. Serve with the wedges and fresh slaw.
