Louisiana-Style Chicken & Sausage Gumbo

Louisiana-style chicken and smoked sausage gumbo with okra, peppers and white rice in a rustic ceramic bowl.

Deep, smoky and full of comforting flavour, this Louisiana-inspired gumbo brings tender chicken, smoky sausage and vegetables together in a rich, gently fiery sauce. Made with Soul Food Seasoning.

🥣 Ingredients

  • 500g skinless chicken thighs, cut into chunks
  • 200g smoked sausage, sliced
  • 2 tbsp Soul Food Seasoning
  • 3 tbsp vegetable oil
  • 3 tbsp plain flour
  • 1 onion, diced
  • 2 celery sticks, sliced
  • 1 green pepper, diced
  • 2 garlic cloves, crushed
  • 400g chopped tomatoes
  • 750ml chicken stock
  • 150g okra, sliced
  • 250g long-grain rice
  • Spring onions, to serve

Instructions

  1. Coat the chicken with 1 tbsp Soul Food Seasoning. Heat 1 tbsp oil in a heavy casserole and brown the chicken and sausage in batches, then set aside.
  2. Add the remaining oil and flour. Cook over medium-low heat for 6–8 minutes, stirring continuously, until the roux is the colour of peanut butter.
  3. Add the onion, celery and pepper. Cook for 5 minutes, then stir in the garlic and remaining seasoning.
  4. Gradually stir in the tomatoes and stock. Return the chicken and sausage, cover loosely and simmer for 30 minutes.
  5. Add the okra and simmer uncovered for another 10 minutes. Meanwhile cook the rice, then serve it with the gumbo and spring onions.
