Smoky Soul Food Red Beans & Rice
Creamy red beans in a smoky tomato gravy make this plant-based comfort food wonderfully satisfying. It is economical, filling and even better after the flavours have had time to mingle. Made with Soul Food Seasoning.
🥣 Ingredients
- 2 x 400g tins kidney beans, drained
- 1½ tbsp Soul Food Seasoning
- 1 tbsp olive oil
- 1 onion, diced
- 2 celery sticks, sliced
- 1 green pepper, diced
- 2 garlic cloves, crushed
- 400g chopped tomatoes
- 300ml vegetable stock
- 1 tbsp tomato purée
- 250g long-grain rice
- 2 spring onions, sliced
- Fresh parsley, to serve
Instructions
- Heat the oil in a large saucepan. Soften the onion, celery and pepper for 8 minutes.
- Add the garlic and Soul Food Seasoning. Stir for 30 seconds, then add the tomato purée, chopped tomatoes and stock.
- Add the kidney beans and simmer uncovered for 25 minutes, stirring occasionally.
- Mash roughly one quarter of the beans against the side of the pan to thicken the sauce, then simmer for another 5 minutes.
- Cook the rice according to the packet instructions. Serve with the beans, spring onions and parsley.

🍽️ Serving Suggestions
Add sautéed greens, cornbread or avocado. Leftovers make an excellent filling for wraps or baked sweet potatoes.
